I’ve recently decided to go gluten-free after experimenting with it and seeing that it had a profound impact on my acne. so that now makes me a gluten-free vegan! when i tell most ppl that they’re like “what do you eat besides lettuce” most unaware foolios tend to think like this. But i view this as a way for me to explore new foods!! For breakfast this morning, I made  Millet. Millet is great because its a gluten-free grain and grains are always super filling! I’m writing this right now and hardley finished whats in my bowl in the picture, its sitting beside me not finished but i’ll probably finish it after i’ve digested a bit
this recipe is super easy and totally delish and doesn’t require much prep work other then soaking the millet over night which gives it a creamy consistency. So its not vital to soak it but it takes away the dry crunch 
ingredients
1 c Millet (soaked overnight)2 c Apple Cider 2 tbsp Coconut Oil1 Cinnamon Stick1/4 c Currants1 Cardamon Pod1 Star Aniseedmaybe Almond Milk if the millet ends up soaking up all the apple cidermaybe Agave Nectar if you have a sweet tooth
directions
Drain your millet thats been soaked over night and put it in a medium sized pot with about 2 tablespoons of coconut oil and the cinnamon stick and star aniseed and cardamom pod. Constantly stir around the millet to make sure it doesn’t stick to the pot and burn. Once you feel the millet has soaked up the coconut oil and the pot becomes fragrant, add in the apple cider vinegar slowly while stirring millet. Continue to stir to make sure millet is covered and evenly spaced. Cover pot to bring to a boil then reduce to a simmer. You can keep it covered to hold in the aroma or uncover to make the house smell like a breakfast heaven ^___^ If you notice the millet has soaked up all the apple cider, taste test it and see if the millet is at the consistency you would like it to be which should be kinda mushy like porridge and if its not at the consistency you would like it to be at then add some almond milk in. 
You could probably sprinkle some hemp seeds on top to add even more protein if you’d like or grind up some flax seeds and sprinkle that on top too to add some omega 3 to your day, which everyone always needs more of!
I drank some warm water with lemon as I was cooking this because its great to start your day with warm water and lemon. Click here to see why warm water and lemon is great for you!! 
I also fresh squeezed two oranges to drink cause i’ve been fighting a cold and i need that vitamin c. 
I even had about another serving or so of millet leftover for tomorrow morning! Yay!! Millet is a beneficial way to start your day because it is very alkalizing so it balances out your Ph for the rest of the day. Millet acts as a prebiotic (like probiotics, but prebiotics cause your body to produce YOUR OWN probiotics). There is serotonin in millet! so be happy!! Millet has lots of fiber, magnesium, vitamin B3 (Niacin), has 15% protein, and hydrates your cute colon to keep you from being constipated! Yay millet!! 

Alllllsssooo this meal is very inexpensive, only cost me about 7 dollars. Millet is really cheap, I half a bag-full of it and it was only 2.96!! and its organic!! the spices were about 2 dollars total and the apple cider 2 bucks or something like that and that was organic as well…and the currants were like 50 cents. Very cost efficient
